This delicious banana bread is sooooo easy to make, and only requires a few ingredients! It also contains no eggs. I came up with the recipe accidentally after I started to make banana bread and realized that the eggs I had in the fridge were expired. Whoops!
Banana bread springs up a lot in the oven, so make sure you have a deep baking pan. I used a Pyrex 1 and 1/2 quart glass loaf pan, and it works great. You want to grease it with a bit of butter prior to adding in your batter to help keep it from sticking.
1 1/2 Cups of white flour 3 Ripe Bananas 1/2 Cup of Cream Cheese (softened) 1/3 Cup of Honey 1/3 Cup of Softened Butter (plus a bit more to grease the pan) 1 Tsp. of baking soda Pinch of Salt Vanilla to taste (I used about 1 tsp) Cinnamon to taste (I used about 1 tsp)
Mix the bananas, cream cheese, honey, butter, and vanilla in one bowl until smooth and well mixed. In another bowl, mix the flour, baking soda, and cinnamon. Mix both mixtures together until you have a smooth batter (you will still have some lumps of cream cheese and banana; that's ok!). Pour the mixture into the baking pan, and make sure it is spread out evenly. Bake at 375 degrees until the bread is brown on top, and a knife or chopstick inserted into the middle comes out clean (about 45 minutes). Brush the top with a bit of butter as soon as it comes out of the oven.
This is best served hot from the over, with a smear of cream cheese flavored with vanilla and cinnamon on top!
